The pomace, chosen fresh and still dripping with juice, blended according to an ancient recipe of Serafino Levi, is now compressed in underground pits in order to get a natural curing, able to extract all the aromas and flavours from the grapes.<\/p>\n

Fermentation of the muscat pomace before distillation, a technique perfected by Romano and to this day is strictly adhered to as it guarantees the perfect preservation of all the aromatic components crucial to the grappa’s organoleptic characteristics.<\/p>\n

Aged in approximately 225-liter barrels immediately upon distillation and stored for a minimum of 6 months with proper humidity and constant temperature.<\/p>\n
The Master Distiller and the Controller certify that this Grappa Riserva is aged in wood, for the period specified above, before bottling.<\/p>\n
