The wine is actually produced with \u201cchampenoise\u201d method i.e. with a natural re-fermentation inside the bottle thanks to selected yeasts. The result is a slightly sparkling wine with a very fine and persistent mousse. As a consequence of the re-fermentation you will find a thin layer of sediment at the bottom of the bottle. This sediments contributes to give the wine his typical fragrance and aromas.
