A high-quality white wine is selected\u2014usually dry and with a neutral aromatic profile\u2014so as not to overpower the added botanicals.<br \/>\nThis is followed by the preparation of botanical extracts (the soul of the vermouth and the secret recipe passed down from generation to generation). These botanicals are macerated (or infused) in a hydroalcoholic solution (wine, alcohol, or a mix of both). The base wine is then blended with the obtained aromatic extracts, pure alcohol (to reach the required final alcohol level, which for Vermouth must be between 14.5% and 22% vol.), and sugar.<br \/>\nThe final blend is left to rest in stainless steel tanks.
