We are in Monforte d\u2019Alba, on the border with Barolo. Here, the sandy component of the soil gives the wine an elegant, yet at the same time complex, profile. The plot is very small and production is limited: this vineyard yields around 2,000 bottles per year. Work in the vineyard follows a careful and continuous approach, from Guyot winter pruning to cluster selection during harvest, including fruit set management, canopy cleaning, and shoot trimming. Vinification takes place in the cellar in Barolo, with crushing, traditional fermentation lasting about 30 days, and extended maceration. The wine then ages for 18 months in wooden casks, followed by around 6 months in bottle before release. It is a Barolo that can already be appreciated after just a few months in bottle, but one that evolves over time and gains even more elegance. The label tells an important story too: it was conceived and designed by Silvia\u2019s daughter and depicts the ciabot on the hill of the Bussia vineyard. A tangible sign of a new generation beginning to join the work in the cellar. Sight It is ruby red with very intense garnet reflections. Nose Its aroma is pleasant and delicate, with hints of dried rose and notes of licorice and vanilla from the wood. Taste You\u2019ll find it velvety, dry, and round, with a rich body and a well-balanced structure. Pairing tips Silvia imagines it with a plate of tajarin with truffle or with a board of aged cheeses, two pairings that match its structure and elegance beautifully. If you want to go beyond the usual pairing, try it at the end of the meal with a piece of dark chocolate: an original match, almost like a digestif, for an intense and surprising finish.
