Some desserts are all about sweetness. The Hazelnut and Dark Chocolate Tarocco plays a different game: one of soft texture, the character of cocoa and the crunch of Piedmont Hazelnuts PGI.
It is made entirely by hand from a mixture rich in hazelnuts and dark chocolate. Once ready, it is spread out on the work surface and cut by hand. No molds: this simple gesture is what gives it its unmistakable little ingot shape.
And the name? Tarocco is the pastry scraper used to cut it. As simple as that.
Sight
A small ingot of chocolate and hazelnuts, compact and deliberately simple in shape. You can see that it is handmade, and that is exactly how it should be.
Nose
Hazelnut and cocoa come through straight away. The aroma is rich and toasted—the kind that makes you want to cut yourself a slice immediately.
Taste
First comes the softness, followed by the crunch of chopped hazelnuts. The dark chocolate adds depth without making the Tarocco overly sweet: the sweetness remains restrained, leaving plenty of room for the flavor of the hazelnuts.
Pairing tips
Enjoy it at room temperature, cut it into pieces and place it in the middle of the table. It is the kind of dessert everyone tries “just a little piece” of. And then another.
Pair it with Barolo Chinato or a full-bodied red wine.
