The Ferragù Estate comprises 8 hectares of vineyards.
Every year the Ferragù Estate Winery produces about 3.000 bottles of Amarone and 15.000-16.000 bottles of Valpolicella Superiore for a total of 20.000 bottles. Recioto is only produced during the best vintage years and only in a small quantity, a thousand bottles.
Wine prepares hearts and makes them ready for passion
The Ferragù Winery is divided into two departments: the upper part, newer and modern, has all the equipment required for transforming the grapes from must to wine. The cellars, with thick and low vaulted walls and glossy doors made of ancient wood, stores and protects the barrels in a suggestive place, where silence reigns.
The wine-making
Above the cellars the grapes are first crushed and destemmed. Then the must is transferred into the fermenting vat.
“Cold” maceration takes place for thirty five hours and then fermentation begins, at controlled temperatures, lasting for about thirty days. The temperature of the slowly fermenting grapes is constantly monitored. Refinement takes place in oak barrels to enhance aroma and flavor.
There are two raisin-drying halls, located inside the cellars in order to best exploit the silent air that is perfect for drying the grapes.
A second harvest
Raisin-drying is a key moment and considered, not by chance, in this area, to be a second harvest.
Grapes must be healthy and perfectly ripe both inside and outside. The best bunches are selected because their grapes are not too close to each other, permitting air to circulate. Bunches are placed on large lugs made of plastic and perforated in order to control the amount of ventilation. A quality product is guaranteed by strict control of vine-shoots and buds, the limited output, the raisin-drying and fermentation techniques that obey solid natural principles and the aging in barriques.
The wine is a superb expression of Corvina, Corvinone, Rondinella and Molinara grapes.

I didn’t find this nearly as dense and powerful and entoxicatingly complex as the 2007 vintage, but maybe it needs more time?
Abbiamo provato il vino Valpolicella Superiore 2007 della cantina dei fratelli Ferragù di Val D’Illasi, Verona.
In paese, la bella dimora giallo ocra con le righe orizzontali arancioni guarda i vigneti di proprietà che si irradiano per otto ettari. Fino a 10 anni fa i Ferragù conferivano le uve alla cantina cooperativa; poi si sono messi in proprio. Ed è eccellente il risultato del Valpolicella Superiore 2007 che ha in sé la forza di un Amarone. Non a caso nasce da una vendemmia della terza decade di settembre di uve corvina, corvinone, rondinella, molinara, messe a passire nel fruttaio per 40 giorni. Dopo svinatura e fermentazione in acciaio, si passa all’affinamento di un anno in barrique. Ma il legno rafforza solo il colore rubino profondo, mentre al naso spicca la freschezza della frutta rossa, e non altro. La medesima freschezza è l’elemento caratterizzante in bocca, che rende il sorso di piacevole equilibrio: stoffa forte e gusto persistente di note minerali. Per l’Amarone, invece, l’appassimento delle uve di vigne vecchie è di circa 70 giorni; l’affinamento di tre anni in barrique e di uno in bottiglia. Ha colore rubino molto intenso, sentori di confettura con note speziate, mentre al palato è pieno, persistente, giustamente tannico. Sì, l’Amarone è enorme, ma immaginate anche quanto sia elegante!

The 2006 Amarone della Valpolicella is another intense wine. Smoke, tar, licorice and black cherries wrap around the palate in this sumptuous Amarone. The 2006 is a fairly obvious wine, with little in the way of real subtlety. Still, there is something about its frank, immediate personality that is appealing. Anticipated maturity: 2012-2016.

The 2008 Valpolicella Superiore is a gorgeous wine that balances opulence and freshness with a deftness that is rare. Clean veins of minerality support a core of blackberry jam, sweet spices and mocha. This juicy Valpolicella is made in a decidedly extroverted style, yet all of the elements are in the right place. Anticipated maturity: 2012-2018.
