Antipasto Piemontese is a recipe rooted in traditional country cooking, created to preserve the flavors of summer and bring them to the table even during the colder months.
The mixed vegetables are prepared fresh and cooked at low temperature in a sweet-and-sour tomato sauce. A simple recipe that keeps the flavors and textures of the different ingredients clearly recognizable.
Sight
It has an intense color, dominated by tomato and enriched by the different vegetables in the recipe.
Nose
The aromas recall summer vegetables, with vegetal and pleasantly aromatic notes.
Taste
It is soft and sweet-and-sour, with the tomato complementing the flavors of the vegetables without overpowering them.
Pairing tips
Enjoy it cold or at room temperature, on toasted country-style bread or as a side for meat dishes.
Try it with medium-aged cheeses or cured meats too. And if you want to make it a little richer, add some tuna in oil.
It’s your guy if…
…You enjoy traditional Piedmontese recipes and those simple flavors that bring back memories of old-fashioned preserves.
