With Alba Tartufi you bring on the table the scent and flavor of the White Truffle of Alba just gathered.
The products are always shipped fresh in specific packages that retain the organoleptic characteristics for the whole trip.
Variety: Tuber Magnatum Pico
Weighs: from 20 to 40 grams.
Appearance: it has a globular, sometimes lobate shape with brown-black rind and tightly-spaced warts with a depression at their summit and lengthwise grooves.
Color: its color varies from pale ochre or dark cream to greenish.
The flesh or gleba is unmistakable and is white or greyish yellow with thin white veins.
Scent: its pleasantly fragrant aroma, different from the garlicky flavor of the other truffles, makes it unique.
It lives in symbiosis with oaks, limes, poplars and willows and is seldom found together with other truffles.
To grow and develop, the white truffle needs particular types of soil and equally particular climatic conditions: the soil must be soft and humid for most of the year and it must be rich in calcium and well ventilated.
Obviously, not all soils are able to guarantee these characteristics and it is these environmental factors that make the white truffle a rare and highly-prized fruit of the earth.
Gathering: from September to December.
Minimum order: 50 grams.
Shipment: Express Courier
Packaging: specific packages that guarantee the product’s integrity right up to delivery.
Delivery times: vary between 2 – 3 working days. Goods will be shipped only on Monday, Tuesday and Wednesday.

Use & Preservation
Cleaning: before eating, it is advisable to clean the truffles with a wet brush (a toothbrush will do) to remove any soil residues. If possible, avoid washing with water.
Recommended quantity: 5-10 grams per person and per course. Chefs in restaurants normally use 5 grams per person. 10 grams are considered a generous serving.
Optimal preservation: remove the truffles from their original packaging and preserve them in an airtight jar, in the vegetable compartment of your refrigerator. Wrap them in kitchen paper and replaced it every day. You can also fill the jar with rice and cook it once eaten the truffle.
To be consumed before: 3 – 5 days from the delivery day.
