Pomace of the great wines of Piedmont DOC-DOCG, comes from the Langhe, a place where the vine has found one of its highest expressions.

The Grappa that results is a unique and exciting balance derived from curing in underground pits and a long period of aging in wood.

Grappa chamomile is obtained by macerating directly fragrant chamomile flower heads with Langhe Nebbiolo Grappa, according to a recipe fortunately found in the diaries of Lidia Levi.

Color: light yellow, transparent.

Nose: flowers and herbs with balanced notes of chamomile.

Taste: aromatic with light and pleasant notes of chamomile well integrated with the full-bodied taste of the grappa.

Alcool: 40% vol.

    Nebbiolo da Barbaresco, Dolcetto d’Alba, Barbera d’Alba.

    Pomace origin and conservation

    DOC and DOCG vineyards of historic producers in Neive, Barbaresco, Trezzo, Treiso and Alba.

    The pomace, chosen fresh and still dripping with juice, blended according to an ancient recipe of Serafino Levi, is now compressed in underground pits in order to get a natural curing, able to extract all the aromas and flavours from the grapes.

    Characteristics of the still

    Copper pot still, the only direct fire device in the world still being used for distilling Grappa.

    Distillation system

    “Grappa distillata da ignari” (Grappa distilled by unaware people) with the discontinuous method with direct fire and submerged pomace.

    Then in the full-grade grappa, chamomile flowers are macerated in proportions defined by Lidia Levi’s ancient recipe.

    After 3-4 weeks, the filtration and blending process is carried out to bring the grappa to the desired degree. This method ensures the preservation of the chamomile scent and uniqueness of Romano Levi grappa in the final product.

    Date on which it was placed in wood

    Immediately at the time of distillation.

    Permanence in wood

    Aged for five years in classic Piedmontese barrels of about 700 litres capacity, made of various types of wood, stored in rooms with the right humidity and at a constant temperature of 14 to 19 degrees C°.

    Certification of aging in wood

    The Master Distiller and the Controller, certify that this Grappa Riserva has been aged in wood, for the period indicated above, before bottling.

    Following the order processing, the bottles are collected to be packed in the least number of packages and processed with a single waybill.

    Packaging

    We are very careful about the quality of the packaging, to avoid problems during shipping.

    For the bottles we use packages that are suitable for transport, which keep the contents still. You may receive two different types (both very valid and chosen according to the regulations of the shipping countries):

    • polystyrene structure inside cardboard boxes
    • cardboard structure and boxes

    As for gastronomic products, these are also shipped in cardboard boxes with bubble wrap or air cushions inside.

    The available payment methods are credit card, PayPal or bank transfer.

    Credit Card

    By choosing credit card, the payment is immediate and safe. It occurs through a secure connection that protects your data, which is encrypted during the transaction.

    PayPal

    Also the PayPal option is immediate. In this case, if you have a PayPal account, your card details remain hidden. The system redirects you to the PayPal site, where you will be asked to log in directly with your credentials (email and password).

    Bank Transfer

    By choosing the bank transfer you end up having longer processing times for we must make sure that we have received the payment, before shipping the goods. This payment method is also safe, but if you are in a hurry to receive your products we recommend choosing an alternative payment method.
