The Monferrato region holds ancient stories. One of these is tied to the olive tree, which was an important presence in these hills until the mid-19th century, before a minor ice age and the gradual expansion of vineyards slowly drove it away from the landscape.
Many years later, the Olearo family brought it back to where it once grew. At the Conca degli Olivi in Cardona, on a plot of about 7 hectares bathed in sunlight and protected from cold winds, the olive trees have found a home once again.
The chosen varieties are leccino, grignan, pendolino, and taggiasca: cultivars that have found a surprising balance in this place.
Today, the olive grove has about 1,600 trees, telling a story of rebirth made of care, time, and respect.
The harvesting is done entirely by hand with a delicate shaking method, while the cold-milling takes place within a few hours in the estate’s continuous cycle mill, installed in 2021.
The result? An extra virgin olive oil rich in polyphenols, with very low acidity and peroxide levels: a product with a clean, balanced profile, capable of expressing its land.
Sight
You recognize it immediately by its light. It is golden with delicate green highlights that speak of freshness and vitality. It flows smooth and lively on the plate.
Nose
It welcomes you with elegant vegetable notes. Fresh grass, sweet almond, tomato leaf, and a hint of artichoke.
It is clean, direct, and at the same time profound.
Taste
It enters soft and precise. Then its character emerges with a slight spicy note and a balanced bitterness, a sign of its richness in polyphenols.
It is persistent, yet remains harmonious.
Pairing tips
You don’t use it to cover, you use it to complete. It is perfect on raw vegetables, hearty soups, white meats, and steamed fish.
It gives its best when paired with risotto, which you can cream raw instead of using butter, for a clean and contemporary result.
