What we commonly call acacia honey actually comes from the flowers of the black locust, a plant native to North America that has been growing on the hills of the Roero since the 17th century.
Its flowering is intense but very brief and, to obtain a pure honey, requires a specific beekeeping technique. After harvesting, the honey is cold-extracted to preserve its characteristics.
It is a simple and versatile honey: you can enjoy it on its own or use it in cooking.
Sight
Its colour is very light, ranging from almost transparent to straw yellow, with a fluid consistency.
Nose
It has a very delicate and discreet aroma, with fine floral notes and subtle hints of wax.
Taste
It is distinctly sweet, with a floral and delicate taste.
Pairing tips
It is excellent with fresh cheeses, but also with more savoury and blue cheeses, and pairs well with cured meats, especially lardo.
You can also use it as a natural sweetener for drinks and yoghurt, in desserts, or simply enjoy it pure.
It’s your guy if…
…You are looking for a delicate and versatile honey, to enjoy on its own or use in cooking without overpowering the flavours of the other ingredients.
