Vinification (Wine-making)
Method: this Barbera is produced with grapes coming exclusively from our vineyards in Castagnole delle Lanze. The manual harvest takes place during the first fortnight of October and the scrupulously selected bunches are quickly sent to vinification. Alcoholic fermentation with maceration lasts about 12 days during which the temperature is controlled if it exceeds 30 ° C to obtain the maximum extraction of polyphenolic substances. The malolactic fermentation attenuates the acidity of the wine, typical of the grape, giving it harmony and balance. This is followed by aging in small medium-sized oak barrels for about six months and another 6 months in the bottle.
