Grape juice is a product born around the year 2000, when many industrial companies, to solve the problem of surplusses, began to bottle fresh must, obtained from the pressing of the grapes. The aim was not to waste the grapes in excess which couldn’t be transformed into DOC and DOCG wines.
In 2012 – 2013, some farmers started to produce grape juice and sell it to restaurants and wine-bars. In this way, the juice gained a new positive image: a healthy beverage that even children can drink.

Vinification (Wine-making)
Method: The grapes are carefully selected and washed with a solution of water, citric acid and sulfur, in order to remove all traces of dust, dirt and pesticides and to have a healthy and clean raw material. As a result, the grapes Moscato and Barbera, mixed together, are de-stemmed, crushed and conveyed to a cold maceration for 24 hours with enzymes, in order to extract the coloring matter from the skin. Afterwards, the grapes are pressed and the must obtained is clarified followed by a filtration, in order to eliminate the yeast that may cause fermentation. The product is then stored at a temperature of -1 ° C – 0 ° C until the time of bottling. Before being bottled, the juice undergoes a series of sterile filtration and microfiltration, in order to eliminate all the microorganisms responsible for alterations or uncontrolled fermentation.
