It all started with Ernesto’s curiosity about Chardonnay, first planted in 1992. Then came the desire to try something new: turning it into a sparkling wine. And so, Sivà was born in 2008, initially classified as Vino Spumante di Qualità.
Even the name is about new beginnings. Sivà comes from the first names of Silvia and Valter, but say it out loud and you’ll also hear a little invitation in Italian: “si va” – let’s go. Time to set off and start something new.
Since 2013, Sivà has been an Alta Langa DOCG, thanks to the vineyard in Sinio, on the hill towards Albaretto della Torre, which became part of the denomination’s production area.
It is a Traditional Method Chardonnay aged for 36 months on the lees: smooth and enveloping, yet supported by freshness and savoriness.
Sight
It is straw yellow with golden reflections. The perlage is very fine, with numerous and fairly persistent bubbles.
Nose
It is intense, broad and refined. Can you pick up the aromas of apple, pineapple and apricot, alongside elderflower? In the background, you’ll also find bread crust and a delicate hint of beeswax.
Taste
It starts fresh and vibrant, then becomes smooth and enveloping. Bread crust and fruit return on the palate, together with hints of resin, beeswax and almond.
The mineral character accompanies a savory, full-bodied and persistent sip. It is balanced and ready to drink now.
Pairing tips
Open it for aperitivo or bring it to the table for a toast on a special occasion.
Its softness and savory character also make it a good match throughout the meal, especially with delicately flavored dishes.
To avoid: heavily spiced dishes, which could overpower its finesse.
