The first thing Fabrizio tells us when talking about his bubbly is that he did not make it for fashion, but to get to know another nuance of nebbiolo.
Among the three he cultivates (barbera, nebbiolo and arneis), he chose this variety because it was certainly the one that would lend itself best to the task.
And so it was that Nebula was born, a bubble that is neither heavy nor exaggerated, with a hint of crisp green apple and an acidity that makes you salivate a lot and calls for good food to go with it.
Fabrizio also gives us some interesting information about the production of his wine. He picks the grapes as soon as they are ripe to ensure that the sugar content is low: the end product must be dry, have a lot of acidity and the skin must not give the wine colour. In short, he demands delicacy from this classic method (and we believe he has successfully achieved it).

Nose
Floral notes of elderflower and hawthorn give delicate nuances of freshness to the fruit, including citrus, yellow fruit, green apple and hints of herbs.
Taste
The sip offers freshness and fruit. The finish is persistent, refined and harmonious.
Pairing tips
This is not the usual aperitif bubbly, in fact it is somewhat wasted in this context.
It accompanies more important and structured, fatty dishes. Fabrizio recommends pairing it with fish and white meat. His favourite dish? Rabbit with herbs.
It’s your guy if…
…You’re looking for a non-cheapish bubble. The fact that it is made from nebbiolo grapes implies a certain importance because it allows you to enjoy it throughout the meal. It is a wine to live with and one that invites you to be out and about.
