This Nebbiolo comes from a young vineyard on the Colla hill, which has been recognised as an Additional Geographical Mention.
Fabrizio, however, wanted to give his wine a fancy name, Para’di’, which for him has a double meaning: it reminds him that each of his hills is a true paradise and indicates his desire to pay homage to the Nebbiolo that his grandfather used to make fifty years ago.
Per tutt’i dì (for every day). A light and drinkable red, the classic Nebbiolino, without negative connotations, but pleasant everyday, easy.
To achieve this, Fabrizio has tried to recreate the conditions of when his grandfather cultivated the vineyard, but as the climate has changed, he has planted his vines on the east-facing slope, 350 metres above sea level.
At one time, this plot was cultivated as an orchard to leave the vineyard the sunniest area (to the west), perfect for the grapes to enjoy the hours of sunset in the autumn, which gave the final push to ripening.
Today, the gentler morning sun acts on the grapes as it did in the past, giving a product very similar to that of Fabrizio’s memories.

You feel it clean and fragrant, of good fruit.

Delicate tannins typical of Nebbiolo and a good lengthening finish win you over.
Pairing tips
Fabrizio recommends it with tajarin al ragù, if you want to stick to the classics. If, on the other hand, you want to change it up a bit, stewed moscardini or richer fish dishes go perfectly with it. The delicate tannin helps to degrease the mouth, despite being a rather delicate wine.
