Barolo comes from lands that are unique in the world, and the nebbiolo vines are cultivated with care and love all year round.
It starts with winter pruning of the vines (guyot method), followed by other work such as fruit-setting, cleaning and cutting the shoots until the best bunches are carefully selected during the harvest.
Vinification is carried out in the Borgogno family winery in Barolo and begins with crushing, followed by traditional fermentation of about thirty days.
The whole set-up of this Barolo is strictly traditional, with fairly long macerations followed by an aging of about eighteen months in 30- or 50-hectoliter oak barrels and a further bottle ageing of about six months before release.
It is a wine that can be appreciated just a few months after bottling, but will continue to improve and develop its elegance as the years go by. A true gem of Italian and international enology.
Sight
A beautiful, very intense ruby-garnet red.
Nose
It is pleasant and delicate with hints of wilted rose and notes of licorice and vanilla given by aging in wood.
Taste
You will perceive it as velvety, dry, round, rich and balanced in body and structure.
Pairing tips
The most classic pairings are risottos, fondue, game, red meats and meat dishes in general (roasted, grilled or spit-roasted).
It is true that Barolo is not a dessert wine, but a meditation wine, however chocolate and hazelnuts highlight its incredible aftertaste.
Silvia and her family recommend you try it with baci di dama (lady’s kisses) and hazelnut brutti e buoni (lit. ugly but good), dry sweets typical of our area.
The right context? On winter evenings, in front of a lit fireplace, while reading a good book.
