Dolcetto is the “wine of friendship“, a wonderful synthesis of authentic country flavors. It is generally consumed within the year following its production.
The processing of Dolcetto follows the same steps as the other Borgogno family vines: winter pruning, the work of setting, cleaning and cutting the shoots, and finally, during the month of September, the harvest.
In the winery we start with crushing and destemming, followed by maceration in the presence of the skins for about 5-6 days at a maximum temperature of 25-27 °C.
The wine is stored in stainless steel tanks. Here it completes malolactic fermentation and is periodically racked off. Dolcetto is bottled between April and May.
Sight
Very bright ruby red with violet hues.
Nose
It is delicate and fruity. A young and fragrant wine.
Taste
It is round, dry and bitterish with hints of fruits such as black cherry.
Pairing tips
It is a wine suitable for the whole meal, you can pair it with hors d’oeuvres, first courses (especially if dressed with meat sauces), soups.
