A little unknown in our area, since this is not its production area, Riesling is a particular wine, which like Nebbiolo, our most precious grape, has great potential for aging.
This is precisely what prompted Giorgio, owner of the Pelissero winery, to take a bet and plant it.
Cultivation
The vineyard faces north, 400 meters above sea level, on a very windy side: these characteristics contribute to giving the wine its aroma and complexity.
Riesling, for being a white grape variety, ripens rather late: around mid-September. To avoid sunstroke and excessive contact with the hot winds that blow from the valley, attention is mainly directed to the leaf coverage, which is kept quite luxuriant.
In the cellar
To give more character and greater complexity to the wine, the must is left in light contact with the skins.
Fermentation takes place at a low temperature and, during the winter break, the wine rests on the fermentation yeasts with repeated pumping over. A few months before being put on the market it is then bottled.
Sight
Yellow-green hue, with beautiful deep reflections that at first sight indicate a rich and full-bodied wine.
Nose
Aromas of honey, butter, flint, tobacco, tea with fruity notes reminiscent of apricot, pear, citrus fruits such as lemon and grapefruit, or plants such as thyme, sage, nettle and hawthorn.
Taste
It is structured, savory, with a good acid note to complement the minerality typical of our soils of marine origin.
Pairing tips
Perfect for a light aperitif based on cold cuts and delicate cheeses. Be careful not to choose cheeses that are too strong in taste, as you risk overwhelming the refined taste of your Riesling.
Also pair it with white meats or with creamy and spicy sauces, such as curry.
Serve it fresh, but not excessively cold.
