Vinification (Wine-making)
Method: the grapes are destemmed, crushed with a special machine and then sent to alcoholic fermentation inside cement and steel tanks, with a capacity of about 8 q each. Fermentation is conducted with specially selected yeasts, at a controlled temperature, under the action of frequent pumping over and delestage
